And why is Café Pluma special?

Characteristics include accentuated acidity and a light to medium body. Tradition indicates that this coffee planted in the Sierra Madre Sur has a harvest that can be extended up to 6 months and divided into three phases that take place from November to April.

It begins with the pepena or the beginning, continues with the intermediate one and ends with the final cut and the whole crop. The harvest is done manually, taking care to choose the cherries at the optimum point of maturity that are recognized for having an intense red color and a firm consistency.

All are planted under the shade, which gives specific organoleptic characteristics inherited from the trees that fulfill this function; They can be mesquite, banana trees or shades in the region.
